Dinner on A Thursday Night

Ate dinner with a friend today, some salty but delicious dishes :)
I made the wings; Vickie made congee, soup and rice.
The meal was filled with fun conversations and laughter.

Overdue Pics: Cilantro Fish Rice Ball Soup



Cilantro fish rice balls
Ingredients for the dish: cilantro, green scallion, marinated boneless fish, dried shrimps, dried mushrooms, fish cakes, Chinese cabbage, radish, pork broth and rice balls

This is what Mom cooked for the Winter Holiday. It's called the "End of Winter", Dong Zi. The rice ball soup is delicious. She cooked the broth with pork, dried shrimps, dried mushroom, radish and Chinese cabbage. After the soup is done, about 45 minutes to an hour; she scoop the soup into a separate pot. Whatever amount of rice balls, fish cakes or fish we like, just add into the soup, let it cook for about 5 to 10 minutes. Add in cilantro and scallion to garnish the dish.

Simple Tomato Egg Drop Soup

Tomato soup is easy to make and good for any season of the year. It's delicious and nutritious. This is a typical Cantonese version family recipe . Every family make it a little bit different, but the main ingredients are always tomatoes and eggs.  The tastes are similar as well and below is my family's version.

Ingredients: tomatoes, scallions, ginger, eggs, sugar, salt

Directions:
1. Cut the tomatoes, scallion and ginger into pieces
2. Heat up the pan with a teaspoon of vegetable oil
3. Add in gingers and stir fried for a while until it smell good
4. Add in tomato slices and stir fried for about a minute or two
5. Pour in a cup of water or two depending the amount of tomatoes you have
6.When it's boiled, put in appropriate amount of sugar and salt ( the taste is suppose to be sweet and sour,  and brings out the flavors of tomatoes)
7. Add in scallions (optional)
8. Add in an egg and stir a little
9. Ready to serve ( you can eat it alone or eat it with rice as a vegetable dish)

Sweet Ginger Soup

I just found a recipe for making ginger soup. It's quick and easy. Ginger soup can help to keep the body warm, relieve menstrual cramps and make you feel better if you catch a cold.



Ingredients: ginger, red date, brown sugar

Directions: 1)Put in appropriate amount of water, sliced ginger and red dates in a pot and bring it to boil
2) After the soup is boiled, put in appropriate amount of brown sugar
3) Boil it for 5 more minutes
4) Ready to serve
